Kielbasa and cheesy potato casserole is a comforting dish that combines tender potatoes, savory kielbasa sausage, and a creamy cheese sauce.

- 1 lb kielbasa sausage, sliced
- 3 large potatoes, peeled and diced
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- 1 can cheddar cheese soup
- 1 1/2 cup shredded sharp cheddar cheese
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt to taste
Instructions
- Preheat oven to 350°F and prepare a 9×13-inch baking dish with cooking spray or butter.
- Heat olive oil in a large skillet over medium heat, add sliced kielbasa, and cook until lightly browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté diced onion for 3-4 minutes until soft, then add minced garlic and cook for 30 seconds.
- Pour in chicken broth and heavy cream, stir in cheddar cheese soup, paprika, black pepper, and salt. Heat through and melt in 1 cup of shredded cheddar cheese.
- In the prepared baking dish, combine diced potatoes and browned kielbasa, pour the cheese sauce over, and stir gently. Sprinkle remaining 1/2 cup of cheddar cheese on top.
- Cover with foil and bake for 60 to 75 minutes until potatoes are fork-tender. Remove foil during the last 10 minutes for a golden top.
- Let casserole rest for a few minutes before serving.
Notes
For a healthier version, use turkey or chicken kielbasa and Greek yogurt instead of heavy cream. Experiment with different cheeses for varied flavors.
