Description

Kielbasa and cheesy potato casserole is a comforting dish that combines tender potatoes, savory kielbasa sausage, and a creamy cheese sauce.


Ingredients

  • 1 lb kielbasa sausage, sliced
  • 3 large potatoes, peeled and diced
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can cheddar cheese soup
  • 1 1/2 cup shredded sharp cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 350°F and prepare a 9×13-inch baking dish with cooking spray or butter.
  2. Heat olive oil in a large skillet over medium heat, add sliced kielbasa, and cook until lightly browned, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, sauté diced onion for 3-4 minutes until soft, then add minced garlic and cook for 30 seconds.
  4. Pour in chicken broth and heavy cream, stir in cheddar cheese soup, paprika, black pepper, and salt. Heat through and melt in 1 cup of shredded cheddar cheese.
  5. In the prepared baking dish, combine diced potatoes and browned kielbasa, pour the cheese sauce over, and stir gently. Sprinkle remaining 1/2 cup of cheddar cheese on top.
  6. Cover with foil and bake for 60 to 75 minutes until potatoes are fork-tender. Remove foil during the last 10 minutes for a golden top.
  7. Let casserole rest for a few minutes before serving.

Notes

For a healthier version, use turkey or chicken kielbasa and Greek yogurt instead of heavy cream. Experiment with different cheeses for varied flavors.
